Ingredients
4 bone-in, skin-on chicken thighs
½ cup grated Parmesan cheese
½ cup panko breadcrumbs
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
2 tbsp olive oil
1 tbsp Dijon mustard
1 tsp lemon juice
Fresh parsley, for garnish (optional)
Directions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Prepare the coating – In a bowl, mix Parmesan, panko, garlic powder, Italian seasoning, salt, and pepper.
- Coat the chicken – In a separate bowl, whisk together olive oil, Dijon mustard, and lemon juice. Brush this mixture over the chicken thighs.
- Press into the Parmesan mixture – Coat each thigh evenly with the Parmesan breadcrumb mixture, pressing firmly so it sticks.
- Bake for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden brown.
- Garnish with fresh parsley and serve hot!
